WBO-Radio: Participates in "Mommyfest Potluck"

Hi Everyone!

Here is a great recipe I used over and over! I get a lot of compliments with this one!

Sour Cream Chicken Quiche

1 (9 inch) pie crust (you can used a purchased crust, thawed, if you like)
1T Olive oil
1/4 c chopped onion
1/4 c chopped green pepper
1 T flour, all-purpose
1 c. cooked, chopped/cubed boneless chicken breast
1/4 t salt
1/4 t ground nutmeg
1/4 t. ground black pepper
1/2 c. shredded sharp Cheddar Cheese
1/2 c. shredded Swiss Cheese
2 eggs, slightly beaten
3/4 c. milk
1- 8 ounce container sour cream

Directions:
1. Preheat your oven to 400 degrees. Prepare your homemade 8-inch pie crust or thaw your store bought frozen crust so that it is ready to fill. Do not cook!

2. Heat oil in skillet over medium heat and saute your onions and bell peppers until soft -- stir frequently. You should do this for approximately 3 minutes. Do not let it burn! Add your flour, and stir again for approximately 2 minutes. Add, your chicken, salt, nutmeg and pepper. Mix well. Remove from stove.

3. Spread chicken mixture over the bottom of the unbaked pie crust and top with the two cheeses. In a small bowl , mix together your beaten eggs, milk and sour cream. Pour mixture over the chicken mixture in pie crust.

4. Bake your quiche at 400 degrees for 20 minutes. Then, reduce your temperature to 350 degrees and bake for another 30-35 minutes. Basically, until done. You can check this by inserting a knife into the center. If it comes out clean, it's done!

Enjoy this with a nice hot roll and tossed salad! You will love it!
